Istanbul’s Best Roasted Liver Places (Gaziantep Style)

In 2021, when we made a list of places that make Gaziantep-style liver roasting in Istanbul, we compiled and wrote a total of 3 places. Unfortunately, there were no places that roasted liver in Istanbul. Imagine 4 years ago. Two leading flavors remain in our minds about Gaziantep and have stood out since the first day we ate it. One of them is ‘liver roasting‘, which makes even those who don’t like liver eat liver, and the other is beyran.

Although the number of restaurants serving Gaziantep food in Istanbul has increased, roasted liver was a late entrant. Roasted liver, made with lamb lung, is a surprisingly delicious and economical dish with the spices added to it—so much so that it offers both a nutritious and satisfying meal. We love roasted liver because of the metamorphosis it undergoes while roasting in the pot for hours. I wish every Gaziantep restaurant would put this famous street food on their menu.

We have compiled the best and most up-to-date places for those who want to eat real Gaziantep-style roasted liver in Istanbul! These places stand out in the 24-hour survey of our Harbiyiyorum Instagram followers and offer the unique flavor of Gaziantep cuisine in the best way.

1.Hayri Usta, Beyoglu

Serving for years in BeyoÄŸlu, Hayri Usta is assertive about Gaziantep-style roasted liver with its spice ratio and cooking technique. Hayri Usta Ocakbaşı is one of the indispensable addresses of kebab lovers in BeyoÄŸlu with its quality and fast service, student-friendly prices, and delicious food. Before I forget, let me add that he also makes raw meatballs (ciÄŸköfte) with minced meat. You can’t find (çiÄŸköfte) raw meatballs with beef everywhere.

2. Aynen Dürüm, Grand Bazaar

A hidden gem in the Grand Bazaar, Aynen Dürüm stands out, especially in its roasted liver wraps. Discovered in 2019, the roasted liver is prepared in a wok pan on the counter in front of the place and served in fresh lavash. It is an ideal stop for a delicious and quick snack. The atmosphere of Aynen Dürüm is also very different.

3. Kebapçı Çetin Usta, Güngören

Kebapçı Çetin Usta is another shabby kebab restaurant in the Güngören district of Istanbul, primarily known for its roasted liver and kebabs. The place is preferred for lunch and dinner with its friendly atmosphere and extensive menu. Çetin Usta is also one of the first kebab restaurants in Güngören.

4. Hanek Kebab, Kurtköy

Hanek Kebap is one of the most ambitious restaurants serving Gaziantep cuisine in the Kurtköy neighborhood of the Pendik district of Istanbul. It stands out, especially for its popular flavors of Antep cuisines, such as beyran soup and roasted liver.

5. Çanak Kebap, Acıbadem and Kozyatağı Branches

Çanak Kebab & Katmer is one of Istanbul’s most successful and consistent representatives of Gaziantep cuisine. With its friendly atmosphere and rich menu, Kozyatağı and Acıbadem branches have offered guests a pleasant experience for years. The roasted liver, which is prepared with carefully marinated lamb lung, blended with spices, and cooked, is served with fresh greens and lavash bread. However, you can only find this flavor at the Acıbadem branch of Çanak Kebap. We called both branches and confirmed.

6. Antebi

Antebi is a restaurant serving Gaziantep cuisine vertical with two branches in Kadıköy district of Istanbul. Both branches offer guests a pleasant taste of Gaziantep flavors with a rich menu and quality service. Both branches have a broad menu of kebabs, lahmacuns, appetizers, and desserts prepared with fresh and natural products from Gaziantep. They are primarily known for their specialties, such as roasted liver and katmer. The Çiftehavuzlar branch starts serving roasted liver every day after 17:00. The Koşuyolu branch serves roasted liver from 12:30 pm until 21:00. Also, while the Çiftehavuzlar branch serves alcoholic drinks, the Koşuyolu branch is alcohol-free. (FYI)

I swear we put roasted liver on the menu here. When we told them that roasted liver was missing in the restaurant of the Antepli family, whose beyran we loved very much during our visits to Eminönü, and that it would be very good here, they immediately added it to the menu. They have been selling roasted liver ever since. And it has been an excellent product. Bon appetit to those who go and eat it.

Birecikli Kebap in Sirkeci is another place that brings the flavors of Gaziantep cuisine to Istanbul. This place stands out, especially with its wraps, and is also known for its roasted liver and other kebab varieties. When we went there, the roasted liver was finished, and we couldn’t reach it. We hope you try it and like it.
