Best Beyran in Gaziantep
A steaming bowl of beyran is one of Gaziantep’s most memorable breakfasts: slow-cooked lamb, rice, garlic and broth brought together over a fierce flame. These seven places take you from Kozluca’s old-bazaar streets to Alleben and Sanayi.
Start here: Metanet for a morning near the old bazaar; Dukat for the lamb-neck beyran we remember from our visit; Kelebek if a smaller portion fits your food plans. Beyran is a meal in its own right, so leave room between stops.

Where to eat beyran in Gaziantep
1. Metanet Lokantası — Kozluca — Start near the old bazaar

Metanet is where we begin our beyran route. Its Kozluca location makes sense for a morning spent around the old bazaar, and the dish is substantial enough to be breakfast on its own. Slow-cooked lamb, rice, garlic and stock come together over a fierce flame just before serving.
What stayed with us from our visit was the work at the stove and the lively morning dining room. Start by tasting the broth rather than judging the bowl only by its chilli heat: the lamb should still come through. Tell the server your preferred spice level when ordering, then leave the bazaar walk for afterwards.
What to order: Beyran.

2. Beyrancı Ali — Sanayi — A tradespeople’s lunchroom beyond the bazaar

Beyrancı Ali takes this route into the Sanayi area of Şehitkamil. It is a straightforward local restaurant where beyran shares the menu with lahmacun, the thin flatbread topped with minced meat. Choose it if you want to explore a food stop outside the old centre.
The photograph shows a wide metal dish of beyran with round pide bread and lemon alongside it. Bread dipped into the broth is a simple way to enjoy the meal between spoonfuls. Sanayi is a separate outing from Kozluca, so place this stop around your wider plans rather than treating all seven restaurants as one walking route.
What to order: Beyran; lahmacun for a different meal.

3. Dukat Beyran ve Kebap — Karşıyaka / Fevzipaşa — Lamb-neck beyran and an open cooking station

Dukat’s beyran station by the front window is part of what we remember from our September 2025 visit. Our order was beyran made with lamb neck, finished in a copper bowl with rice and broth. We found it richer and oilier than Metanet’s—a useful distinction if you are choosing between the two.
Dukat is a large restaurant with kebabs, lahmacun and katmer as well as beyran. It suits a group that wants several Gaziantep dishes, although we would finish the bowl before deciding whether to add a kebab. Read our full Dukat visit for the preparation and tasting notes.
What to order: Lamb-neck beyran; lahmacun or katmer if you want to extend the meal.
Address: Karşıyaka Mahallesi, Fevzi Paşa Caddesi No:38, Şehitkamil, Gaziantep

The address above is the restaurant’s own published address; some map listings use Fevzipaşa / Korutürk Caddesi. Confirm directions with Dukat if needed.
4. Beyrancı Mustafa — Yazıcık — A small beyran-focused stop

Beyrancı Mustafa is the smaller, beyran-focused option in Yazıcık. It belongs on the list for people who want to build the meal around one dish rather than work through a long restaurant menu.
The preparation photograph captures two stages side by side: rice and shredded meat waiting in a metal dish, and another portion bubbling over the flame after the stock has been added. That final burst of heat is central to beyran. Plan this as a morning stop and check service before travelling; published closing times vary considerably.
What to order: Beyran.

5. Sakıp Usta Paça, Beyran ve Kebap — Alleben — Beyran for a group with different appetites

Sakıp Usta combines beyran, paça and kebabs on Kemal Köker Caddesi. Gaziantep’s gastronomy guide lists beyran and küşleme among its specialities. Küşleme is a tender lamb cut, while paça refers to a different family of meat soups.
This makes Sakıp Usta practical when one person wants beyran and another would rather order a kebab or paça. Say which dish you want clearly: beyran and kelle paça are separate orders. The Alleben location also gives you an alternative to concentrating every meal around the old bazaar.
What to order: Beyran; paça or küşleme for an alternative.

6. Kelebek Paça, Beyran ve Kebap — Alleben — A smaller portion for a longer food itinerary

Kelebek is another Kemal Köker Caddesi stop. Its menu describes beyran with cooked lamb, rice, marrow-bone stock, lamb fat, garlic and spices. It also lists az beyran, a smaller portion—a useful choice if you want room for other Gaziantep food later in the day.
The broader menu includes paça, kavurma and kebabs, so a group can order different dishes here too. If beyran is your reason for coming, give that bowl your attention first: look for tender meat, a sensible balance of rice and broth, and garlic that leaves room for the lamb flavour.
What to order: Beyran or az beyran (a smaller portion).
Address: Alleben Mahallesi, Kemal Köker Caddesi No:67/A, Şahinbey, Gaziantep

7. Beyrancı Ejder Usta — Bekirbey — Another beyran stop around Büyüktaş Sokak

Beyrancı Ejder Usta is on Büyüktaş Sokak in Bekirbey. It adds another beyran address to the Yazıcık–Bekirbey part of the route, away from the Alleben restaurants and the Sanayi stop.
Keep the order focused on beyran and state your chilli and fat preferences before the bowl is prepared. The photograph shows lemon and green peppers alongside the dish; taste the broth before adding either. This is a useful stop to consider when your plans already bring you to this part of the city.
What to order: Beyran.

What is beyran?
Beyran is a lamb-and-rice dish served in a deeply flavoured broth with garlic, lamb fat and chilli. The meat is cooked slowly in advance; individual portions are then finished over intense heat. It is often called a soup, but the lamb, rice and fat make it substantial enough for a full meal.
The bowl arrives extremely hot. Give it a moment, taste the broth, then decide whether you want lemon or more pepper. In Gaziantep, eating it for breakfast is part of the appeal, though some restaurants also serve it later.
How to order beyran
“Bir beyran, lütfen” means “One beyran, please.” Add “az acılı” for less chilli or ask for “acısız” if you want no chilli. Check whether the kitchen can make that adjustment before the bowl goes on the flame.
“Az yağlı” asks for less fat; it does not remove the richness of the lamb stock. “Az beyran” means a smaller portion where offered, not a less-spicy one. Kelebek explicitly lists this portion size on its menu.
For your first bowl, concentrate on tender lamb and a balanced broth. Rice should complement the meat rather than turn the dish into a thick porridge, while garlic and chilli should leave room for the stock’s flavour. Tell the server your preferences before preparation.
Plan your Gaziantep beyran route
Choose one main stop for breakfast. Metanet works with an old-bazaar morning; Dukat can fit plans around the Karşıyaka and Zeugma side of the city. Sakıp Usta and Kelebek are on the same street in Alleben. Sanayi is a separate detour, so do not plan this list as one continuous walk.

Frequently asked questions
Is beyran only eaten for breakfast?
Morning beyran is a Gaziantep tradition, but some restaurants serve it later too. Check beyran service separately from general restaurant opening hours, especially at smaller shops.
Is beyran the same as kelle paça?
No. Beyran combines lamb with rice and garlic broth. Kelle paça uses head meat and a different preparation; other paça dishes may use trotters. A restaurant offering both does not make them interchangeable.
Can I order beyran without chilli?
Ask for acısız before preparation and confirm what the kitchen can adjust. If you simply want less heat, ask for az acılı.
Can I order a smaller portion?
Kelebek’s menu lists az beyran. Ask at other restaurants whether a smaller portion is available; do not assume every shop offers one.
How much does beyran cost?
Prices vary by restaurant and portion. Check the current menu when ordering, including whether any bread or side dishes carry a separate charge.
