Best Baklava in Gaziantep
For the best baklava in Gaziantep, our selection brings together eight addresses, from the historic market in Şahinbey to shops in Şehitkamil. Start with Koçak or Zeki İnal for şöbiyet, Elmacı Pazarı Güllüoğlu for a market-side sweet stop, or İmam Çağdaş if you want kebab followed by baklava at the same table.
The pleasure of this route is in changing your order: square baklava at one stop, şöbiyet at another and dolama somewhere else. Pick two or three addresses rather than trying to finish all eight in a day.
Quick answer: For a first visit, combine Elmacı Pazarı Güllüoğlu, İmam Çağdaş and Çelebioğulları’s Elmacı Pazarı branch with a walk around the old market. For a separate Şehitkamil outing, consider Ayıntap, Akıncıoğlu and Koçak. Fıstıkzade needs its own transport plan.
English edition and online branch-information review: 23 October 2026.

1. Koçak Baklava — Mücahitler, Şehitkamil

When we think of Koçak, we think of şöbiyet first. On an earlier Gaziantep trip, we had already eaten küşleme at Halil Usta and liver at Köşk before coming here for dessert. The şöbiyet still managed to command our attention. That is the order we would make room for again.
The fine pastry, pistachio, cream filling and clarified butter are the attraction. We also enjoy its pistachio baklava, but if your trip includes several sweet stops, choosing şöbiyet here gives you something different from another plate of standard baklava.
What to order: Şöbiyet and pistachio baklava.
Address: Mücahitler Mahallesi, Abdulkadir Behçet Caddesi No:44, Şehitkamil, Gaziantep

2. Elmacı Pazarı Güllüoğlu (Mahmut Güllü) — Elmacı Pazarı, Şahinbey

This is the Güllüoğlu associated with Mahmut Güllü in the old market, a useful distinction when you are searching for a specific shop. It is one of the addresses we have known for years. What we like is the way the pistachio comes through the fine layers without the syrup overwhelming everything else.
Make room for kaymaklı baklava, the version with cream, and look for Mihrimah in the display. Rather than collecting a takeaway box and moving on, we would sit down for a plate as part of an Elmacı Pazarı walk.
What to order: Kaymaklı baklava; ask about Mihrimah.
Address: Karatarla Mahallesi, Elmacı Pazarı No:4/A, Şahinbey, Gaziantep

3. İmam Çağdaş — Şekeroğlu, Şahinbey

İmam Çağdaş makes sense if you want kebab and baklava at the same table. Its Uzun Çarşı address is a practical stop for a first visit to Gaziantep, particularly when you want a full meal followed by dessert rather than two separate stops.
Our sweet order is kare baklava, the square-cut style. Plan your lahmacun or kebab order with dessert in mind: here, we would give the baklava a proper place in the meal instead of treating it as an afterthought.
What to order: Kare baklava; kebab or lahmacun beforehand.
Address: Kale Altı Uzun Çarşı No:49, Şahinbey, Gaziantep

4. Baklavacı Zeki İnal — Atatürk Bulvarı, Şahinbey

Zeki İnal is another address where our recommendation goes beyond classic baklava. In our earlier coverage, şöbiyet was the pastry we singled out; we would still put it high on the order list here.
Treat the Atatürk Bulvarı shop as its own stop rather than assuming every place in this guide is in the same market lane. If you are visiting two or three shops, ordering şöbiyet here lets you compare different makers’ versions without eating exactly the same thing at every table.
What to order: Şöbiyet and baklava.
Address: Atatürk Bulvarı, Şahinbey, Gaziantep

5. Çelebioğulları Baklava — Elmacı Pazarı branch, Şahinbey

Çelebioğulları belongs on a baklava walk through the historic market. Pistachio was the feature we highlighted in our earlier coverage, and this branch fits a day that combines market shopping with a sweet stop.
The branch matters: Çelebioğulları also has shops elsewhere in the city. This guide refers to Elmacı Pazarı, so check the name on your map before setting off. For takeaway, arrange your purchase around when you plan to leave rather than carrying a box through the whole day.
What to order: Pistachio baklava.
Address: Elmacı Pazarı branch, Şahinbey, Gaziantep

6. Ayıntap Baklava — İncilipınar, Şehitkamil

Founded by Levent Usta in 2000, Ayıntap gives this route a stop on Gazi Muhtar Paşa Bulvarı. Its range is the main reason to consider it: special square baklava, special şöbiyet, yaprak şöbiyet and midye baklava offer several different shapes and styles to explore.
We would particularly look at the şöbiyet options rather than ordering only classic baklava. If you are already in the Gazi Muhtar Paşa area, it makes an easy separate sweet stop from the old-market part of the trip.
What to order: Özel kare baklava, özel şöbiyet and yaprak şöbiyet.
Address: İncilipınar Mahallesi, Gazi Muhtar Paşa Bulvarı No:28, Şehitkamil, Gaziantep

7. Akıncıoğlu Baklava — Değirmiçem, Şehitkamil

Akıncıoğlu’s range includes baklava, square baklava, havuç dilimi, midye baklava and şöbiyet, alongside bohça and dolama. That variety makes it worth considering when a group wants to share several pastries rather than order a large portion of one kind.
We use the Değirmiçem branch on Gazi Muhtar Paşa Bulvarı for this guide. The business has other branches, including Gatem, so make sure your map matches this address. Mixed selections are also worth asking about if you are buying a gift.
What to order: Kare baklava, şöbiyet and dolama.
Address: Değirmiçem Mahallesi, Gazi Muhtar Paşa Bulvarı No:37/A, Şehitkamil, Gaziantep
Phone: +90 342 321 67 00

8. Fıstıkzade — Fıstıkçılar Sitesi, Şehitkamil

Fıstıkzade is a separate shopping stop rather than another shop on the historic-market walk. Its Fıstıkçılar Sitesi store combines baklava with pistachios, pistachio paste and regional products, making it useful if you want to take home more than dessert.
For pastries, look at special square baklava, dolama and special şöbiyet. Open the location before planning your journey and give this stop its own time; it should not be treated as a short detour between the old-market shops.
What to order: Special square pistachio baklava, dolama and special şöbiyet.
Address: Gaziantep Fıstıkçılar Sitesi, 2. Kısım, E Blok No:237, Şehitkamil, Gaziantep

How to plan a Gaziantep baklava route
For an old-market outing: Build your day around İmam Çağdaş, Elmacı Pazarı Güllüoğlu and Çelebioğulları’s Elmacı Pazarı branch. You do not need to order a full plate at every stop. Share portions and vary the pastry.
For a coffee break, read our visit to Tahmis Kahvesi. If you prefer a savory meal before sweets, our Dukat Beyran review is another Gaziantep stop to consider.
For the Şehitkamil side: Ayıntap and Akıncıoğlu put you on Gazi Muhtar Paşa Bulvarı. Koçak’s selected branch is in Mücahitler; check the journey between them rather than assuming they are next door. Fıstıkzade, in Fıstıkçılar Sitesi, is a separate shopping visit.
What to look for when choosing and ordering
Keep the pastry names: Fıstıklı baklava is pistachio baklava; kare identifies a square cut; şöbiyet is a filled pastry commonly ordered alongside baklava; and dolama is a rolled style. Havuç dilimi refers to the large wedge-shaped cut, not a carrot ingredient. Pointing to the display is often the clearest way to confirm exactly what you are ordering.
Look beyond sweetness: In our own comparisons, we pay attention to the pastry layers, the pistachio and how the syrup sits with the rest of the bite. Ordering different varieties helps you discover what you like rather than turning every shop into the same test.
Match the price to the quantity: Ask whether the displayed price is for a portion or per kilogram. We have not listed fixed prices because the product, weight and current menu matter.
Plan takeaway around your journey: Tell the shop when you will travel and ask for storage and consumption advice for the exact pastries you choose. Do not assume cream-filled and other varieties have identical keeping requirements.
Our take
We would rather enjoy two or three stops properly than rush through eight. Share portions, give şöbiyet a place alongside baklava and leave a little time for coffee. If you know another Gaziantep address that deserves a visit, tell us in the comments.
Frequently asked questions
Where can I eat kebab and baklava at the same place?
İmam Çağdaş is the option in this selection for combining a savory meal and baklava at one table. Plan the main course with dessert in mind.
Where should I try şöbiyet in Gaziantep?
Koçak and Zeki İnal are the addresses we have particularly highlighted for şöbiyet in our own coverage. Ayıntap is another option if you want to compare varieties such as special şöbiyet and yaprak şöbiyet.
Can I visit all eight shops on foot?
Do not treat this as one continuous walking route. The old-market shops make a more compact outing; the Şehitkamil addresses and Fıstıkzade need separate journey planning.
How much does baklava cost in Gaziantep?
There is no single price across the city. Check the shop’s current portion or kilogram price for the exact pastry before ordering, especially when comparing a mixed selection with one variety.
Which shop is number one?
The numbers help you follow the selection; they are not scores or an absolute quality ranking. Choose according to the pastry you want and the part of the city you are visiting.
