Where should you eat goulash in Budapest? Start by deciding what kind of meal you want. A cup before a main course, a generous pot at a traditional restaurant and a bistro lunch all offer different ways into Hungary’s best-known soup.

Order gulyásleves if you want the soup

English menus can make “goulash” sound like a thick beef stew. In Hungary, look for gulyásleves when you want soup: pieces of meat and vegetables in a paprika-seasoned broth, sometimes with little pinched noodles. Pörkölt is the thicker, paprika-rich stew you may have in mind instead.

1. Gettó Gulyás: start with soup, stay for pörkölt

Gettó Gulyás is a useful starting point if you want to explore Hungary’s paprika-rich pot cooking. The menu’s Alföld-style goulash comes with sourdough bread; the stew section then opens up a different side of the meal, from beef cooked in red wine to other pörkölt and paprikash choices.

We would make the soup the first course and share a stew afterward, leaving enough appetite to compare the broth with a thicker sauce. Its Wesselényi utca address fits a day in the Jewish Quarter. For an evening meal, arrange a reservation rather than building your plans around a walk-in table.

2. Stand25 Bisztró: make a meal of it

Stand25 puts goulash among its house classics. On the Buda side, this is an option for a longer lunch or dinner: begin with the soup, choose another Hungarian dish and leave room for somlói, the layered sponge-cake dessert.

The menu also offers a three-course format, so compare that with ordering à la carte if you want a full meal. The Attila út location works with a visit around the Castle Tunnel and the Buda end of Chain Bridge. The published menu is available Monday through Saturday; check your chosen service before booking.

3. Frici Papa: the home-style table we know

Frici Papa is the place in this selection where we have sat down to our own Hungarian dinner. Checkered tablecloths, the high vaulted ceiling and the mezzanine gave the room its old-fashioned character. Goulash with pieces of meat and potato was part of the table; the red-wine beef with nokedli was the dish we would especially return for.

The wider menu also suits a table where everyone wants something different. We would treat the goulash as the beginning of a sit-down meal, then decide how much appetite remains for a main course. It is an easy address to keep in mind while exploring the center.

6. Kéhli Vendéglő: choose a cup or a small pot
